These
"Diamonds of the Kitchen", with their irresistible aroma,
are never cultivated in farm or garden. They grow wild in
the woods, and have to be found by specially bred and trained dogs and
pigs. The famous white truffles are found only in Italy,
in the Piedmont region, in and around the town of Alba.
Each trifolao, as truffle hunters are called in dialect, has
his lucky spots, often handed down from father to son.
Once these treasures have been unearthed, they are used to memorable
effect in risotto, pasta, veal, salads, appetizers, etc.
